Paneer Pattis stuffed with Cheese


Ingredients:
Paneer made from 1 ltr milk*
1 green chilli finely chopped
1/2 tsp ginger garlic paste
1 pinch turmeric powder
1/4 tsp red chilli powder
Mozerella cheese for filling-grated
gram flour for consistency
Salt to taste
Oil to fry

How to Make:

* How to make paneer: Boil milk, once boiled, keep on low flame and add a whole lemon, mix. Boil for 5 minutes after milk breaks. keep aside until it cools and then strain the water out.

Pattis:
mix together, Paneer, green chilli, ginger garlic paste, turmeric powder, red chilli powder and salt.
add gram flour to bring the ingredients together.
roll into balls and flatten it in between your palm.
place grated cheese in between, make another pattis and place over the cheese. make sure it is sealed properly.
shallow fry on both sides until brown.

1 onion (medium) finely chopped
1 green chilli finely chopped
1/2 tsp ginger garlic paste
1 pinch turmeric powder
1/4 tsp red chilli powder
1/2 tsp garam masala powder
gram flour if needed
Salt to taste
Oil to fry

How to Make:

* How to make paneer: Boil milk, once boiled, keep on low flame and add a whole lemon, mix. Boil for 5 minutes after milk breaks. keep aside until it cools and then strain the water out.

Pattis:
mix all ingredients except oil.
add gram flour only if needed, i.e. to bring the ingredients together.
roll into balls and flatten it in between your palm.
shallow fry on both sides until brown.



Serve with chutney and tomato sauce.

Veggi Pie

very easy, yummy vegetable pie.

Ingredients:

For pie
1 cup Maida
1/2 cup melted butter/olive oil
1/2 tsp baking powder
1 tsp mixed herbs
cold water
Salt to taste

For filling
7-8 mushrooms cut into 4/6
5-6 cloves garlic finely chopped
1/2 capsicum cut into cubes
1 small onion chopped
1 large tomato chopped
Jalapeño as much as required, minimum 4 slices
u can also add other fillings like olives, spinach, sweet corn etc.

3/4 cup grated cheese (mozerella n cheddar)
2 tsp oil/butter
pepper to taste

salt to taste

How to make:

Pie: Mix all the ingredients except water. use the cold water to get the consistency of a chapathi/roti dough. cover in a cling film and refrigerate for 20 minutes.
make 2 parts of the dough, 3:2 ratio. roll out bigger part. grease the pie mould and them place the rolled out dougn on the mould. press to get into shape. prik with fork. bake at 220 C for 15-20 mins. refrigerate the other part.

Filling: take oil in a wok, add garlic, onion and mushroom. saute until mushroom is cooked. let it cool. add all other ingredients. you cal also add tomato sauce for a ttangy taste or mayo too. but it's optional.

getting them together:
Once the pie dough cools, add the filling. Roll out the other part of the dough. cover the pie. make sure you seal the pie. prik with the fork..Bake at 220 C for 15 minutes.

Tandoori Vegetables



Serves 4

Ingredients
2 large potatoes each cut into 4 (round)
2 large carrots cut into 1 cm rounds (8 pieces)
1 pack paneer or tofu cut into large cubes
8 pieces of large cauliflower pieces
2 large capsicum, each cut into 8
1 lime juice
salt to taste

grind into paste:
2 cups coriander chopped
1/2 ripe mango (optional)
1 green chilli
8 cloves garlic
1 inch ginger
1 inch cinnamon
salt

How to make
Boil potato and carrot for 10 minutes or microwave closed for 5 minutes. let it cook
boil the cauliflower for 2 minutes. let it cool.
mix all the vegetables, paneer, salt and lemon juice. marinate for half hour.
add the paste, marinate for minimum 2 hours. keep in fridge.
arrange them on skillets and grill them.

Serve hot...












Mushroom Pepper


Ingredients:
1 pack mushroom (10-12)
7-8 cloves garlic roughly chopped
1 green chilli sliced.
1 large capsicum diced
2 tsp butter
1/2 tsp pepper
salt to taste
1 handful Coriander chopped to garnish

How to make:
Take butter in a pan. Add garlic. sauté for 2 minutes on high flame.
add green chilli, saute for another minute.
add the mushroom, salt, pepper. sauté. close and cook on high flame for 5 minutes, tossing in between.
add the capsicum and mix. let it cook for another 5 minutes on high flame (do not close).
cook until mushroom is dry.

garnish with coriander before serving.


Chocolate Brownie....


Ingredients

3/4 cup butter
1 cup sugar
1 teaspoon vanilla
3 eggs
1 1/4 cup maida
2/3 cup cocoa powder
1 tsp baking powder
a pinch of salt
1 cup walnuts
1/2 cup chocolate chips


How to make:
Preheat oven to 180 deg C (350 F)
grease a tin with butter and spread maida over it.
Melt the butter.
Beat eggs with sugar, and add vanilla, flour, cocoa, baking powder, salt and melted butter (should be room temperature).
Add chopped nuts.
Bake at 180 C degrees until a wooden pick inserted in center comes out clean, approximately 30 minutes.
Cool the cake. before cutting into pieces.

Babycorn Garlic Pepper

very easy, fast n simple

Ingredients:
1 pack babycorn (10-12)
7-8 cloves garlic roughly chopped
1 large capsicum diced
1 lemon (juice)
2 tbsp butter
1 tsp pepper
salt to taste

How to make:
Take butter in a pan. Add garlic. sauté for 2 minutes on high flame.
add the babycorn, salt, pepper. sauté. close and cook on high flame for 5 minutes, tossing in between.
add the capsicum and mix. Close and let it cook for another 5 minutes on high flame. Mix in between.
Add the juice on 1 lemon, sauté for another 2 minutes.



Serve Hot...
